Salmon with aromatic herb sauce served with baked potatoes and sprouts

Ingredients (4 people)
• 400g frozen sprouts
• 600g potatoes
• 5g salt
• olive oil qs
• balsamic vinegar qs
• 4 sprigs of parsley
• 4 sprigs of coriander
• 2 cloves garlic

Preparation method
The potatoes are washed and lead to roast with salt, when ready, shake off the salt and crush them up a bit by hand to appear to have led a punch. Thaw up the sprouts in the microwave and lead to braise with 0.5 dl of olive oil and the laminated garlic for 5 minutes over low heat (just a pinch salt).

For the sauce:
Parboil the parsley and coriander and cool them down in cold water, then put them in the blender with olive oil and vinegar and mash.
Put a non-stick frying pan on the stove with a little olive oil. When it is hot, lay down the seasoned salmon fillets with a little salt and let it cook a minute on each side, then take to the hot oven to finish cooking for about 5 to 7 minutes.
Serve the salmon with roasted potatoes and stewed sprouts and moisten with the sauce.
